Recipe: Confetti Sugar Cookies

By now we can all raise our hands and say that we have momentarily given up on our New Years Resolution diets. So, in the spirit of being a little naughty but also embracing that the sun is shining and things don't look so bleak I wanted to shower you all in rainbow sprinkles! Sooo for my first ever recipe post I give you:

Confetti Sugar Cookies!

(Preheat oven to 325 degrees)

1 cup butter (room temperature)

2 cups granulated sugar

2 eggs

2 1/2 teaspoons pure vanilla extract

2 1/2 cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

1/2 cup rainbow sprinkles!!! 

Now first things first, put on some music that you can shake your tush to; I have been playing the Arkells on repeat BECAUSE I GOT TO MEET THEM THIS PAST WEEKEND! 

Okay now for the cookies, cream together your butter, vanilla, and sugar.

Next add your eggs, I always love the look of the bright yellow yolks against the soft butter and sugar.

Now add your dry ingredients (salt, baking powder, baking soda, and flour) annnnd sprinkles!!!!

Now I find that letting my dough chill in the fridge for 24 hours, produces the best cookies. But if you can't wait that long just let the dough chill for like 30 minutes. If you decide to take the latter route this is a good time to preheat your oven and munch on some jelly beans.

I'm going to be honest here, my oven was already preheated because I had a delicious dinner of chicken nuggets, mozzarella sticks, and jelly beans. BUT say you're not a glutton like I am, once the dough is chilled and your oven is preheated you can divvy out your dough. I use a medium sized ice cream scoop for uniform cookies.

And scoop to your little heart's content! I use a silicone mat for all my baking, but you can also use parchment paper.

Now bake at 325 for 10-12 minutes.

And voila! Festive, happy little sugar cookies that are so delicious and easy. I absolutely ate one that was too warm and I burnt my mouth.... Cest la vie!
